The taste qualities of walnuts are familiar to everyone, and the healing properties of fruits are popular in folk medicine. But few know that jam is made from unripe nuts - a healthy delicacy with a unique taste.
How to Make Walnut Jam
There are several varieties of such jam: from unripe nuts with peel, from peeled green fruits, with the addition of berries, cocoa, spices, etc. The process of preparing a dessert from unripe nuts is quite a long one, the preparatory stage takes a lot of time.
Nuts for delicacies are collected in the first month of summer, when they reach milk ripeness. The maturity of the nut is checked with a toothpick or a needle - it should easily pass through. For cooking, fruits of approximately the same size are selected.
Important! It is recommended to carefully sort the nuts before cooking so that there are no rotten or diseased fruits.
You can make jam from unripe nuts with a peel, in which case it will turn out dark. There are also recipes in which the green peel is removed from the nut - such a treat will be light. The reason is that the shell contains a pigment that gives the delicacy this color, so you should work with nuts in rubber gloves so that the skin on your hands does not stain, because the paint can last up to two weeks.
It is also important to choose the right utensils for cooking: it is ideal to use a stainless steel pan with a thick bottom or an enameled dish. Cooking nuts in copper and aluminum containers is highly discouraged, because the surface of the pan will collapse under the influence of acid produced during the heat treatment of fruits. Stir jam with a ceramic or wooden spoon so that it does not burn.

At the end of the preparation, it is recommended to weld the nuts for several minutes in boiling water, remove and dry.
To make a classic jam, young nuts are boiled for several hours on low heat, then immersed in prepared sugar syrup, boiled for 5-7 minutes and left for 12 hours. A syrup is prepared from sugar and water in a ratio of 1: 1 for each kilogram of nuts. The cooking procedure is done 3-4 more times with interruptions to thicken the dish. Packing dessert on the banks, first put the nuts, then pour them with syrup.
In the variant of preparing nuts, without using lime, they are soaked in clean cool water for 10 days, also constantly changing it. Before that, a hole is made in each fruit, where the clove is placed. Jam is prepared in 4-6 sets, boiling it for 10 minutes every 6 hours.
