The recipe for a delicious soup of fresh russula
You can cook delicious mushroom soup using russula. Such a dish will help diversify the menu or may become one of the main vegetarians in the diet, since it is not inferior to meat in nutritional value. Selection and preparation of ingredients
Regardless of whether mushrooms were bought in the store or collected in the forest planting independently, their quality and freshness is checked by foot. It should be broken and assessed the state of the structure of the internal cavity - if there are no spots, voids and worms, then the mushroom is quite suitable for cooking.
Important! Russula refers to conditionally edible mushrooms. This means that it is impossible to eat it without preliminary heat treatment.
Pre-russula needs to be washed in running water, cut into small slices. Then pour water, boil for 30 minutes, then drain the liquid and can be used for further cooking.
Fresh russula soup with potato recipe
Nutritional value per 100 g:
- Rinse boiled russula in running water, place in a pan and pour 3 liters of water. Send the same bulb directly in the husk, previously washed, and a clove of garlic. Put the liquid on the fire and bring to a boil.
- After boiling, reduce the heat a little, place the bay leaf, black pepper, carrots and potatoes, diced into cubes, as well as on a branch of dill with parsley. Cook for 20 minutes.
- After the specified time, remove the greens and onion from the liquid, salt to taste. As soon as an acceptable level of salinity is reached, turn off the fire. Wait 20 minutes (until the soup is infused) and serve.
- Arrange on plates, season with sour cream and garnish with fresh parsley.
Russula soup can be boiled with chicken breast, or meat broth instead of water. So the taste of the first dish will be brighter and more saturated.
