Basic storage rules
Mushrooms are best stored in refrigeration units. Before this, they should not be washed, they will turn black. A suitable temperature for long-term storage is considered to be 5–7 degrees.
It is preferable to save champignons in dishes with a lid in order to preserve their moisture. If storage is organized using plastic bags, it is best to let them breathe every few days, since the condensate collected there will accelerate the process of decay.
There is also the option of storing champignons in a refrigerator and without a container, but then this will significantly reduce their shelf life. For storage, you can use other methods. For example, freezing or pickling. By choosing these methods, you can significantly increase their shelf life.
To pickle mushrooms, they must be washed, then pour water and boil in the marinade. At the end of cooking add vinegar essence. Then decompose the product into sterilized containers and roll up.
Important! Canned champignons are best placed on the bottom shelf of the refrigerator. This will help to maintain their taste for longer.
Shelf life in the refrigerator
Not everyone knows how much you can save products. Champignons are not recommended to be stored for more than three days at room temperature, as they will darken. To keep them fresh longer, it is better to pack and store them in a special box for vegetables.
At temperatures up to + 3 ° C they will look good for about a week. When airing, the shelf life in plastic bags is 6–7 days. But you need to ventilate them. Otherwise, condensation will form, due to which the mushrooms will rot.

If you follow all the tips, on the lower shelves of the refrigerator, mushrooms can be stored for about a week. If the product lies without a bag or container on the upper shelves of the refrigerator, then storage will last no more than 3 days.

How to store in the freezer
If you want to freeze raw mushrooms, first wipe them with a cloth, if the specimens are large, you can cut them. In this case, it is better not to wash them.
With the method of freezing boiled champignons, they must be washed and boiled in salted water until fully cooked before being cooked. After draining the broth, put them in bags or plastic containers, after checking if they are tightly closed. And freeze them.
When roasted, it is also not difficult to freeze them. To do this, they must be fried in a small amount of oil, previously washed and cut. Wait until it cools completely, arrange in packets and freeze.
Many also prefer to store champignons in dried form, but with this method, mushrooms lose their taste and attractiveness. It is better to store dried mushrooms in a room where sunlight does not fall, in paper bags or in canvas bags.
Freezer storage methods
This storage method is good because mushrooms can be stocked for a long period.
Important! You can freeze once, so it is better to store mushrooms in portions, which will be enough for one preparation.
Before freezing champignons, you must perform the following steps:
- Make a selection for quality.
- Remove damaged areas, clean the hat.
- Rinse with water, then lay on a paper towel and wait to dry.
- You can store both whole and chopped. The term of savings in this way is up to 3 months.
- Arrange the prepared mushrooms in packages, close well and place in the freezer.
Sometimes freezing is carried out without purification. But during defrosting, the hat will be very difficult to clean. There are several storage options in the freezer.
It takes a long time to freeze boiled champignon. After all, you need to clean it, boil it in salted water and dry it.
With this method of freezing, the permissible shelf life can be about 6 months.
You can also prepare baked mushrooms for freezing. To do this, lay out a clean, cut product on a baking sheet covered with foil or parchment paper.
Bake for about 15 minutes at medium temperature. Freeze after cooling completely.
